The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Place all the items in a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Next, remove from the stove and let it to cool entirely. Decant into an sterilised bottle, seal keeping it in the refrigerator, where it will keep for around one month.
For the Cocktail Base: Combine all the liquid ingredients into a sizeable container, allow it to infuse for 60 minutes, then strain best through muslin, so it's perfectly clear.
When ready to serve: Add 85ml from the cocktail base to a mixing glass packed with ice, and stir lightly for one minute to cool it down. Pour into a chilled martini glass or similar, garnish with the cranberries and complete it with a light spray of the essential oil over the top.
